I don't understand why everyone is moving tech startups rather than commodity start ups. can someone please explain to me how from engineering and innovation we have only gone to companies and news focusing on AI.

There are many , Commodity is need , The consumables which the consumer pay for , Just take example of Noise , Boat , Lenskart , mac Donald’s , pizzahut , Nike , many more and counting , these are the most basic that I can call
