How can I turn on international transactions on my stripe ? Of course I don't have a GST. Do you know any alternative?

Stripe wants GST, government wants revenue to issue GST, but you need customers to generate revenue. It's like asking for work experience to get your first job, but make it fintech. suggestion: Try Razorpay or PayU, they're more flexible with early stage Indian startups
