Fascinating, I agree but disagree with you for now, because honestly what I feel is this concept won't work for the masses, because here the raw materials (vegetables, fruits or herbs) are grown on a rooftop with limited space, and of course a huge maintenance cost in the middle of the city (major reason for higher prices ig)... So yes it does serve goodness and trust but unfortunately not for everyone. But I have visited places in India where they literally own a huge farm for their restaurants, yes they incur costs for logistics but as SRK said "kuch paane ke liye kuch khona padta hai". they serve trust and freshness but not with that aesthetic that rooftop farm restaurants does... so yes this is what I think... But that restaurant was also expensive ๐๐ญ So the moral of the story is, east aur west paani puri wale bhaiya best! ๐ Jokes apart, I would love to talk about this... if you wish DM me ๐ค๐ป
