Many companies have very poor data privacy policies.
I am completely averse to giving my Aadhar/ Pan or even registering for EPFO because of the fact that I am worried that my data will be treated like a joke.
Is there any way out of this?

Welcome to India, man. Your data is already out there in 50 different places. Between banks, telecom, and every app asking for Aadhaar, your info’s been compromised multiple times already. There’s no real escape
