Today, while eating my all-time favourite dairy dessert — Khees — a traditional sweet from rural India made using the first milk (colostrum) a cow gives after delivering her calf, sweetened and slow-cooked to perfection, an idea hit me. What if this dish could be served in modern cities, where Gen Z is surrounded by fast foods like burgers and cookies, yet also becoming more health-conscious? Khees, also known as First Milk or Colostrum Pudding, has a significantly higher nutritional value than regular milk. It could be a perfect market-fit product with premium packaging for metro cities — appealing to both Indian and Western market. The biggest challenge? Availability of colostrum milk. It's extremely rare and often consumed immediately in rural homes during the special occasion of a calf's birth. But like every good idea, this one has solutions too. Have you ever tried Khees?
