I am currently researching the Dairy Industry, especially Paneer and butter. Being a Chef I have personally faced issues using 500 gm of butter block by cutting it in smaller cubes and then using it for my dish prep. Also for paneer, as it comes in round edged shape, there is a lot of wastage involved in cutting it. As it comes packed in muslin cloth in most of the restaurant, the weight of wet muslin cloth is also involved in the weight of paneer which comes to a total average of around 300-500 gms of total wastage. I am trying to build a brick like structure for Paneer and Chocolate slabs for butter for Restaurant and bakery consumption, which can reduce the efforts and wastage for the products used. I would like to hear from the community about there thoughs on this. P.s I have run a Dairy plant in past when I was 18 but it was just what everyone else was doing. I would also love to Involve people in it who are proactive and good thinkers. Money is always welcomed.
