It is so difficult to run a restaurant business. TGI Fridays filed for bankruptcy. A few days back I was in @Sidecar (the overhyped awarded bar in GK, Delhi) - it seemed like a dead place. It is so difficult to run a restaurant business and keep it relevant over a period of time - how do the successful ones do it? Are cloud kitchens the only way forward?
