Definitely you just need to create your brand and you become easily profitable because in fruits business you have 60% gross margin also you need to purchased directly fruits from farmers for better quality and profits in business. But the main problem is that most of the people want something with juice like burger or anything if you're serving juice in cafe. so my suggestion is that don't open cafe because most of the people in India is opening cafe and creating big franchise scam bubble. Take away is the best way to attract large customers base and you just need to set-up attractive THELA( cart ) If all these carts are company owned then you get more profits FSSCI licence and mcd noc are the two licences you need For starting the business without police interference also whenever you become big company hire lawyer team for your street vendors. There is only 3-4 brands who is selling lassi in the juice space or 1-2 brands who is competing without any dedication and marketing
