Bro the biggest problem is the monopoly of the govt over this railways, they'll never allow any outsiders to just come and sell whatever they want, especially in the catering category due to the high chances of the hygiene maintanence, quality issues and other small problems. So, if anyone wants to do business in railways, they'll need to take either contracts by bidding or should have political and monetary support. and also, it's very difficult to earn the profits for both you and the vendors as there will be more travelling, labour efforts,etc. Anyway one bad news for you is that, railways is trying to include Zomato for delivering pre-ordered foods, they might sell at higher costs, but this might be the biggest challenge for you to be in competition with them.
