For a Simple UI, let's start with how users will interact with it. As you mentioned it is an AI Career Counsellor so it will be a 1 on 1 Interaction. A UI as a Chat Application should be the main motive here (somewhat like ChatGPT, Gemini etc). Light UI = faster response and loading time. About the color combination: I would go with a simplistic approach. Something like, Blue Accent with nearly grey background with day/night modes. To make it little eye catching, we can have a transition or shadowbox around the input box when we are receiving the response from backend (loading screen while it loads the entire response) (Maybe you already have these I am not sure as it's just a screenshot)
