Sounds great on paper, but execution is everything. Indian street food is about that perfect balance of crunch, spice, and texture. One wrong move and you'll lose the entire authenticity. How will you maintain that crispy sev texture? The protein source matters immensely - whey might work for non-vegetarians, but vegetarians need more nuanced solutions. Also, pricing will be crucial. Street food consumers are price-sensitive AF.
