Former robotics engineer here. The 'baking on the way' concept was fundamentally flawed from day one. Moving ovens in trucks? The power requirements, safety issues, and maintenance nightmares would've been insane. Sometimes the 'boring' solution (static kitchens) exists for good reasons.
