it totally depends on the use case. it'll be great if you could expand on that. I have worked with pi os, base debian , and arch(highly unstable) on pi. for example if you need a GUI and the pi will be connected to a display. i suggest go with pi o

pi os it is quite stable out of the box, probably fulfill you use case from my current knowledge. you should look into more ways to get the whole infrastructure stable. example connecting a RJ45 instead of relying on WiFi. use multiple pies or a group of pi zero to divide incoming load. better safe than sorry! right.
