pi os it is quite stable out of the box, probably fulfill you use case from my current knowledge. you should look into more ways to get the whole infrastructure stable. example connecting a RJ45 instead of relying on WiFi. use multiple pies or a group of pi zero to divide incoming load. better safe than sorry! right.
