The main problem is the restaurant doesn't care much about customers in tier 3 cities , they know that their table will be filled . Take an example : You book a table in a restaurant at tier 3 city , but there are people who are just waiting to be seated , then the restaurant management will definitely make that people to sit in your Booked table , because for 1 customer they won't make 2 or 3 customers angry !

In india) This concept might work in the international market (as i have heard few businesses offering same experience within their branches in eu & aus) but I think it'll be a little harder for indian market where people nowadays have wide & diverse options to explore, procrastination doesn't help with this good cause. Inshort: Practical Concept, little tought to crack in india(also considering big giants would offer takeovers or acquisition) but practical for other part of the world.
