What would be the ideal way to start a product based company (saas)?

At this moment saas is very cluttered and even if you do random search of any idea there are bunch of things running actually. It's time for some specific niche based saas products. The time is over for cluttered saas products. I feel keep your thing simple at beginning. Just sell your usp and as people grow, grow your services. Getting traffic in your product is a much more hard currently. Either your product saves them money, time or experience. Until then they don't even care of your ads and marketing. These are my views as I have done some research and following the trends in fintech products, Ecom products and also saas products.

I have one genuine question for you , if I want to go in SaaS type business, should I have to learn technical stuffs deeply or should I delegate it ( like hire some engineers as a contract basis to work on my web apps )

Why people are not talking about food industry and hard tech ? Every single person is discussing about Ai and saas even we all know that this space is too much cluttered and there are rarely few gaps also that gaps never provide you huge money for
