how will you cater to the emotional attachment that a desi-eater has when it comes from a "panipuri wala bhaiyya"? Every puri being served right there in front of ones eyes with steaming hot Ragda and quick mix of flavoured water HAS MORE APPEAL than a end to end decentralized system... What are your views?

agreed, but the flavour is different in different in different stalls ... I just wanted to find the perfect pani puri bhayya who has the best tasting recipe and appoint him as a manager and then train few panipuri guys or even automate by a robot as it's not so difficult. then spread multiple stores and literally have stalls in each colony .
