Want to start Content Creation On Instagram as a Theme Page. Looking for a niche of Technology,Startup and Jobs available in my state. What type of content should I make so that I stand different from the crowd.. For eg. posting stories of founders, no code tools ,etc i.e it already very saturated.. So what type of content I can make?

Go with the Stories of new Startups which are helpful for the present as well as future Gen. There are many startups which many people doesn't know about and hence they are unknown. Do research and make content on those startup so that the startup can grow and also people can get benefitted by the startup.
