Actually there is an app called Udaan and I am using this app from past 5 years for my restaurant groceries,raw items and vegetables also this app works on B2B so your idea is not a new idea and this app will give you a very high competition
Yes but udaan only for big restaurants they supply high price products big brands only small restaurants and street vendors not using this because of udaan kyc they don't have proper documents so I found gap here

I've been in this business a long time. You say you've done three months of research and are confident it will be profitable. Hotel system operate only on credit; they aren't goona pay you on delivery or before delivery, how will you manage payments? Also, vegetables and dairy are perishable; how will you manage warehousing? If you've addressed these issues, I'm in, or I can help.
I suggest you first visit some restaurant hotels in your city and conduct market research. No restaurant or hotel is having any trouble ordering vegetables or dairy; everything is readily available from their dealers. A startup succeeds when it solves a problem, but in this case, restaurants and hotels face no such problem. Why would they order from you? Even with good prices, you cannot undercut the local market; you would buy from them, as they already supply directly to restaurants.
Iam currently working on research still after some transaction we provide credit in app we check coustomers behaviour and some qualitys they we approve credit limit In warehouse alredy we store raw material and more items and long shelf life vegetable also like onion, garlic, potato,like that rest of the items we out source from direct market vendors we will contract with vendors for short shelf life vegetable they provide we take it and delivery
But other platforms like blinkit and zepto can also follow this idea as they are already in this market field
